Winter warmer

In winter, there’s nothing better than a steaming plate of porridge to start the day! And I’m not talking about the tasteless, gluey kind that we were served in school, but about the fragrant, spicy and full of goodness kind that will set you up for a great day! It’s s easy to make, and it can be varied to suit your taste and mood.

Here’s my basic recipe (5 servings – so you don’t have to prep every day):

  • 500ml oats
  • 2tbs flaked almonds
  • 2tbs chopped walnuts
  • 2tbs sunflower seeds
  • 2tbs pumpkin seeds
  • 1tbs cinnamon
  • 1-2 tsp salt

Toast all ingredients, except the salt, in a dry non-stick pan until the oats and almonds turn lightly golden. Allow to cool, then add the salt and transfer into a plastic or glass jar. To cook, take 100ml of your mixture (remember to dig all the way from the bottom of the jar, as the ingredients tend to separate according to weight), put in a bowl together with 150-200ml water (depending on how hard you prefer your porridge) and cook in the microwave for about 3 minutes. Serve with fruit or berries and cold milk.
