Oat & banana pancakes

This morning, me and the hubby had a lovely breakfast in the sun! These oat & banana pancakes are completely wheat free, and relatively low GI. If you want to make the GI even lower, replace the honey with stevia or another low-GI sweetener.

  • 200ml oats
  • 2 eggs
  • 50ml coconut milk
  • 1 banana
  • 1tsp bakingpowder
  • 2tbs honey
  • 100ml sunflower seeds
  • 1tbs oil
  • 1tbs cinnamon
  • dash of salt

Mix the oats with a stickmixer until it has the texture of rough flour. Mix all dry ingredients. In another bowl, mash the banana and beat with eggs, milk, honey and oil. Mix in the dry ingredients and allow to swell for about 10-15 minutes. Melt a little butter in a non-stick pan and fry small pancakes (this recipe should make you 4 nicely-sized pancakes). Serve with Greek style yoghurt, mixed with a couple of drops of vanilla essence and roughly chopped walnuts.
