I often need a little pick-me-up in the afternoon, and before exercise, and what is better than a healthy and energy-packed snack? These yummy little bites of energy are really easy to make! For 10-12 bites, just take:
- A handful each of: sunflower seeds, cashew and pecans nuts
- A small handful of pumpkin seeds (they have so much flavour, so if you use as much as of the other ones it will overpower them)
- 2 tbs essential seed mix (flax, sesame etc.)
- 2 tbs almond flour
- 3 dried figs, softened in water for 10min
- 3 tbs coconut oil
Roughly chop the nuts and sunflower seeds, and roast in a dry pan until slightly golden. Allow to cool. In the meantime, chop the figs finely and mix with the almond flour and seed mix. I like these snacks to have some texture, but if you prefer a smoother finish you can blend all ingredients except almond flour. Lastly, add the coconut oil and mix thoroughly. If the oil is solid, just put the required amount in a cup and put the cup in hot water until the oil is liquid.
Put 2 heaped teaspoons of mixture into a small cupcake cup and pat to ensure that it all sticks together. For each bite, dig from the bottom of the bowl so that you get enough oil as this will be the glue that holds it all together. Let the bites solidify in the fridge for a few hours, then remove from the cups and wrap in foil and return to the fridge to avoid the oil from “melting”. They will keep for about 2 weeks in the fridge.
