This is a super simple way to give your strawberries a bit of oumpf. It works a treat with perfect, sweet berries, but can also do wonders for those not-so-sweet ones that you get very early in the season.
In a bowl, mix the zest and juice from one lime with two cubes of raw sugar (or two teaspoons of brown sugar), a tablespoon of chopped basil and a tot of good quality rum. Mix well well and make sure that the basil is bruised to release its wonderful oils. Marinate chopped strawberries in the lime mixture for a couple of hours. Serve with creme fraiche mixed with a little sugar and fresh vanilla.
